Ingredients for Nimmakaya Pachadi:
1. Nimmakayallu (Lemon): 12 (dozen)
2. Turmeric powder: 1 tsp
3. Salt: 100g
4. Mustard Seeds: 2tsp
5. Fenugreek Seeds(Menthulu): 1tsp
6. Hing: 1/2tsp
7. Red chilli powder: 50g
8. oil
Steps to Make Nimmakaya Pachadi:
1. Take a dozen lemons and colour should be in yellow colour.
2. wash lemons cleanly after that clean it with a dry cloth and keep for drying fully.
3. Make sure that each lemon is cut into 8 equal pieces and remove the seeds.
Transfer them into a bowl.
4. Take extra 6 lemons and squeeze the juice into lemon pieces bowl.
5. Add 1 tsp turmeric powder into the bowl.
6. Add 100g of salt into a bowl and mix well ingredients. Close the bowl and leave it for 5 days. Make sure you will be mixing daily at once.
7. After 5 days of storing, separate pieces and juice. keep both pieces and juice for sunlight for 1 day.
8. Again add the pieces into juice.
9. Now take a pan on the stove. add 2tsp mustard seeds, 1tsp menthulu(fenugreek seeds) and fry them in low flame till they get the flavour.
10. Cool it completely and make it a fine powder.
11. add 4tsp of oil and heat it for 30 secs after that add 1/2 tsp of hing. Turn off the flame immediately. To the same oil add 500g of red chilli powder and mix well.
12. Take a bowl in which we have lemon pieces and juice and now add fine dowered masala (mustered seeds + fenugreek seeds). Add red chilli powder and hing paste to the same bowl. mix well and store them in an airtight jar.
