Veg Kadai Paneer
Ingredients for Veg Kadai Paneer:
1. Coriander seeds (2tsp)
2. Cumin or Jeera (1 tsp)
3. Pepper(1/2 tsp)
4. Dried Red chilli(3)
5. Carrot (1 Chopped)
6. Potato (1 chopped)
7. Matar or peas (3 tsp)
8. Gobi or Cauliflower (15
florets)
9. Beans (5 chopped)
10. Capsicum (10 cubes)
11. Paneer (10 cubes)
12. Butter (1tsp)
13. Bay leaf(1)
14. Kasuri methi
15. Onion(1 finely chopped)
16.Ginger garlic paste(1 tsp)
17. Turmeric powder(1/2 tsp)
18. Kashmiri red chilli powder
(1/2 tsp)
19. Tomato puree(1 cup)
20. Salt(1/2 tsp adjust as per
your taste )
21. Fresh cream (2 tsp)
22.Coriander (finely chopped)
23. Garam masala (1/4 tsp)
Steps to Make Veg Kadai Paneer:
1. Add 2tsp coriander seeds,1tsp
cumin,1/2 tsp pepper and 3 dried red chillies.
2. Roast until the spices turn
aromatic.
3. Now blend to a coarse powder
and the Kadai masala is ready to keep aside.
4. Take another large Kadai to add 3
tsp of oil once oil gets heated add chopped potato, carrot for 3 minutes.
5. Add 3tsp of peas, 15
florets cauliflower, 5 beans, capsicum 10 cubes and half tsp of salt.
6. Mix well until the vegetables
are cooked well and return to their shape.
7. Now add Paneer cubes and mix
well until paneer turns into golden brown.
8. keep cooked vegetables aside.
9. Add one tsp of Butter and
saute, one bay leaf, one tsp Kasuri methi, 1tsp cumin mix until the spices turn
aromatic.
10. Add finely chopped onion,
ginger garlic paste and mix well until onions turn into golden brown.
11. Add 1/4 tsp of turmeric
powder, half tsp of chilli powder mix well and turn the flame into low.
12. Add one cup tomato puree and
saute well until it thickens completely.
13. Now add Kadai masala
powder and half tsp of salt.
14. mix well until the mixture
releases oil. Add roasted vegetables and mix well
15. Add a half cup or more water
by adjusting consistency as required.
16. Now cover and cook for 5
minutes until vegetables are cooked completely.
17. Finally add 2 tsp of cream, 2
tsp coriander and half tsp of garam masala and mix well.
18. Transfer into a bowl and
enjoy with Naan or Roti.
