Tomato Sauce – Latini was chef to the Spanish viceroy of Naples, and one of his tomato recipes is for sauce alla spagnuola, "in the Spanish style". The first known use of tomato sauce with pasta appears in the Italian cookbook L'Apicio moderno, by Roman chef Francesco Leonardi, edited in 1790.
Why is tomato sauce bad for you?However, the fact is, this sauce is laced with preservatives and chemicals. Overusing tomato sauce for a long time can cause certain health problems like diabetes and obesity. However, the healthy alternative could be to prepare fresh tomato sauce at home.

Ingredients

  • Tomato (250gms)
  • Salt (1 tsp)
  • Onion (2 small cut rings)
  • Garlic (4 pieces)
  • Water (120 ml)
  • Cloves (3)
  • Sugar (4 tsp)
  • Tamarind water (1 tsp) or Vinegar 
  • Red chilli powder (1 tsp)

    Instructions




    • Take 250 gms of Tomato and wash them nicely. cut them into 4 pieces each.
    • Take a pressure cooker, now transfer the tomatoes, add salt(1 tsp), add onion(2 small cut rings), add garlic(4),
          add cloves(3) and finally add water (120 ml). Adjust the flame to low and wait till 5 whistles.
      3. Once the tomato pieces are cooked softly and cool them completely. 
      4. Once it is completely cooled down transfer them into a blender.
      5. Blend them till they become a fine paste-like puree and then filter the puree into a blow.
      6. Take a thick bottom Kadai and transfer the puree from bowl to Kadai and start heating in low flame.
      7. Stir the puree into low to medium flame for about 5 mins.
      8. Now add sugar(4 tsp) to puree and melt them completely.
      9. After sugar mixed well, now add tamarind water (1 tsp) and add salt(1/2 tsp) and red chilli powder(1 tsp). 
    10. cook for 5 to 10 mins till the sauce comes into consistency.

    Notes

    • Choose tomatoes which are in full red colour.
    • Vinegar alternative you can use tamarind water.
